Tamworth pork belly, this is a particularly fatty piece of meat best suited to slow roasting for 2-5 hours to allow all the flavour from the good fats to penetrate the meat – just turn the temperature up to very high to get a lovely crunchy crackling.
Alternatively, slice and cook over indirect heat on on a BBQ, season well or rub with your favourite spices.
