Under Blade Fillet of Beef
The under blade fillet is cut from the single Teres Major muscle in the shoulder. This cut is lean with a touch of marbling and not far off the better-known fillet. The downside is that we only get two per animal.
Once cooked ensure the meat has had chance to rest before eating.
