We leave this as a whole piece so you can grate to use in savoury or sweet recipes, or chop up to render down into an oil. Suet has a very high smoke point, which makes it ideal to fry with or use in pastry.
When rendered down and used as an oil, suet helps to make the most delicious crispy roast potatoes!
