Raw Gammon Joint (Nitrate-free)
A delicious and nitrate-free Gammon Joint made with pork from our partnered regenerative farms – free-roaming, slow-grown, woodland and pasture raised pork.
Cooking Instructions:
Begin by soaking the joint in cold water for 2-4 hours to remove excess salt. Place in a large pot, cover with fresh water, add aromatics (like onions and bay leaves), and simmer for 2 hours until tender. For a sweet finish, score the fat, glaze and roast at 180°C for 20-30 minutes.
