Fallow Venison Rack
French trimmed rack of Fallow venison is without a doubt, the king of the venison cuts. Cook it exactly the same as a rack of lamb with a subtle sauce. Sear the fat layer until nicely browned, then finish in the oven whilst you prepare a fantastic sauce. Works great with mushrooms, redcurrants or even blueberries.
