This slightly fatty cut, taken from the lower part of the shoulder, has the perfect texture for slow cooking. It is great as an alternative family roast or can be slowly smoked over indirect heat with a generous rub of spices and finished over a high heat to give a crisp crust. Brisket will be the new family favourite.
